Century-old e’jiao producer shines with unique charm

  100 years ago, Hongjitang E’jiao, a kind of donkey-hide gelatin, came into existence in Jinan and was reputed as “national e’jiao” for its unparalleled quality and production method later. Today, Hongjitang continues to make such gelatin with the ancient method.

  “E’jiao was made of pure donkey hide and with strong order of donkey meat before the 20th century ”, a staff of Hongjitang said. Le Jiayu, the 12th generation inheritor of Tongrentang who had established Hongjitang in 1907, invented a new manufacturing method prolonging the previous three days and nights to nine and added some traditional Chinese medicine materials.

  In 1915, Hongjitang E’jiao won the gold medal at Panama Pacific International Exposition and attracted the attention from the world. In the following decades, e’jiao produced by Hongjitang was sold in countries like Malaysia, Singapore, Indonesia and Japan.

  Hongjitang recovered production in 2012 and maintained its 9-day-and-night refined extraction and purifying method which contains 99 procedures and 300 sub-procedures. The whole procedures last for 80 days.

  Hongjitang e’jiao is made with gold and silver cookware. “E’jiao made with such cookware features stable quality and more remarkable efficacy”, said Wu Xianglun, the third generation inheritor of Hongjitang E’jiao. “E’jiao produced in this way is only served for the royal family in ancient times”, he added, “fortunately, ordinary people can enjoy such food today”.

  Hongjitang has set up a complete production and management standard and quality control system, refining its producing technique into over 300 procedures, each with specific operation standard and monitoring point on 24 key procedures.
